Matcha Cheesecake

In this Matcha Cake recipe we show you how to prepare a delicious Matcha Cheesecake, because Matcha is not only suitable for drinking, but also wonderful for baking!

Ingredients:

Cheesecake Mass

Cream cheese (700g)

Natural yoghurt (120g)

4 large eggs

Sugar (300g)

Salt (1 pinch)

Icing sugar (1 tablespoon)

Vanilla extract (1 teaspoon)

Matcha powder (2 tablespoons matcha - we recommend Matcha Zen)

 

Cheesecake Floor

15 chocolate biscuits

Sugar (2 tablespoons)

Salt (1 pinch)

Butter (4 tablespoons)

 

Preparation:

  1. Preheat oven to 175°C
  2. First, the chocolate biscuits are crushed into small biscuit crumbs. This works best when you put it in a freezer bag and work with a rolling pin.
  3. The biscuit crumbs are then mixed together with sugar, salt and melted butter in a small bowl and then placed in a springform pan (approx. 26cm in diameter). The whole thing is then pressed to the ground by hand until an even cake base is created. Bake the cake base in the oven for 10 minutes and leave to cool.
  4. While the cake base is in the oven, the matcha powder and 2 tbsp yoghurt can be smoothed together with a hand blender.
  5. In a large bowl, stir the cream cheese creamy for about 2 minutes and mix with the matcha yoghurt mass prepared in step 4 and the remaining yoghurt to a creamy mixture. The eggs, vanilla extract and a pinch of salt are now added to this mixture during mixing.
  6. The matcha cream cheese mixture is now placed on the cake base in the springpan and baked in the oven for about 45 minutes until the cake is firm. In the middle, however, the cake may be a little softer.
  7. Finally, cool the matcha cake in the fridge for an hour and leave to firm. The Matcha Cheesecake is ready!

The cheesecake can still be sprinkled with icing sugar or otherwise decorated.
