Ingredients for your Matcha sponge cake with lemon icing:

You need for the dough:

  • 250 grams of sugar
  • 125 g Butter
  • 4 egg yolks
  • 500 grams of wheat flour
  • 1 cup baking powder
  • 1 Tablespoon Matcha Powder (Recommendation: Matcha Zen or Matcha Gourmet)
  • 1 pinch of salt
  • 250ml milk
  • Grated zest of a lemon from the health food store or lemon flavor

For the shape:

some butter or margarine for spreading and breadcrumbs or semolina for sprinkling to prevent the cake from sticking to the pan.

For the icing:

juice of a lemon
Powdered sugar or 1 packet of lemon cake glaze

Preparation of your Matcha sponge cake with lemon glaze:

For the dough, first stir the sugar, butter and lemon zest until fluffy, then add the egg yolks one by one and mix everything. The flour is mixed with the baking powder, the salt and the matcha powder and gently stirred alternately with the milk and the egg mixture. Pour the finished dough into the greased and sprinkled bundt cake tin and smooth it out. When adding the Matcha powder, it is best to try how intense you want the color and aroma to be.

Place the mold in the preheated oven and bake at 180 °C for 50 minutes. When the cake is done, simply let it cool on a cake rack in the tin.

The cooled cake is then turned onto a cake plate and coated with the cake glaze. You make the icing from the juice of the lemon, which you slowly drip into a bowl with powdered sugar. Please be careful not to add too much juice to the powdered sugar so that the frosting does not become too thin.

Instead of grated lemon zest, you can of course also use lemon aroma, you can also buy the lemon icing yourself. The lemon from the health food store, on the other hand, is natural and contains no aroma!
