But every now and then everyone needs a little sin. And how "sinful" you implement this matcha recipe is still up to you.
Here, only one bag of vanilla sugar is provided for the dough, no more sugar. For this, you can decide for yourself which ingredients you use as toppings. Sugar and cinnamon, cane sugar, but also as a classic version of maple syrup, home-made jam or jellies or even a chocolate cream are simply suitable for this purpose.

Ingredients for about four Matcha Pancakes:
Separate the egg white from the yolk and place in a higher vessel. Mix the egg yolks with sugar, salt, flour, baking powder and matcha powder with the whisk or blender.
Add milk in small quantities until a delicious creamy mass is formed. Maybe add a little less matcha powder and try how intense taste and color should become.
Then beat the egg whites until it is firm and gently lift under the mass.
Put the butter in a pan and bake the matcha pancakes (size about 8 cm) on both sides until golden brown. Make sure the fat isn't too hot so the pancakes don't get dark too quickly.
